Quick, Easy and Delicious Soup

Ingredients
- 2 tbsp olive or coconut oil
- 2 tbsp minced ginger
- 2 cloves garlic, peeled and minced
- 8-10 medium carrots, chopped into 1 inch pieces
- ¼ tsp cayenne pepper
- Sea salt & pepper to taste
- 1 quart coconut milk (approx 2 cans, plus a little water)
- 2 cups of vegetable stock
- ¼ cup fresh cilantro, chopped (keep the stems)
- 1 lime, quartered for serving
- Sriracha for serving
Instructions:
1. Put the oil in a medium saucepan over medium heat. When hot add the ginger and garlic, sautee till brown, approx 5 minutes.
2. Add the carrots, a pinch of salt and ¼ tsp cayenne. Cook for a minute then add the coconut milk and 2 cups of stock Add the cilantro stems.
3. Bring mixture to a boil then lower the heat to medium low and simmer for 15 minutes.
4. Fish out the cilantro stems. Use an immersion blender to puree in pan.
5. Divide the soup and garnish with lime quarters, cilantro and sriracha if desired.
