Decadent Squash Apple Soup 

Ah….who doesn’t love the taste of a warm harvest soup on a cool autumn day? When preparing this creamy sweet soup, make a double batch and freeze in small containers. This way you will always have some grab and go healthy options on hand when time is short.

Ingredients:

  • 4 cups Butternut squash 1 L
  • 2 cups apples 500 ml
  • 1 cup onion 250 ml
  • ¼ cup celery 50 ml
  • 4 cups chicken broth 1 L

Directions:

1) peel, core and dice squash

2) peel, core and dice apples

3) dice onion

4) dice celery

5) Heat chicken broth in medium sized cooking pot

6) Add squash, apple and onion and continue to heat at medium heat for 50 minutes or until all vegetables can be easily pierced with a fork.

7) Remove from heat and allow to cool

8) Puree in your blender on high for 2 minutes. Depending on the size of the blender you may have to repeat this a few times to puree it all. Then heat and serve with whole grain toast or a salad.
